the "vimto" variety the anthocyanin content of the dry calyxes is (10 to 15) g kg 1 and the vitamin c content is0.5 g kg 1. calyxes are dark red and slightly acidic. the variety is found in all agro ecological zones of senegal. this variety, originally from sudan, enjoys an excellent reputation on international markets. the "koor" variety is less rich in dry extract and anthocyanins, but has high levels of organic acids. its calyxes are more acidic than those of the "vimto" variety, and it is grown in all the country's agro ecological zones, particularly in the groundnut basin, where it has long been known. production of this local variety is less developed than that of the "vimto" variety. however, during interviews with players in the sector, particularly exporters, some clearly indicated that the koor variety was in demand because of its high acidity. it is easy to market due to its relative rarity. according to the testimonies gathered, this variety is used in a mixture with the "vimto" variety, to enhance the acidic taste when the calyxes are processed into beverages and jams. the "thai" variety, known as "thaï", was selected in thailand for its high fiber content.
